Berkshire swine are a heritage breed mentioned in English records as far back as the late 1600's. They produce a more marbled meat than today's commercial breeds and defy the term “white meat” . Here medallions of the tenderloin are seasoned, seared, and sliced to wallow contendly among a pumpkin-spinach-parmesan bread pudding, kale braised with cannellni beans and a carrot puree. An apple-Dijon mustard chutney lends a piquant garnish.

Chef rubs a  fillet of mani mani then sears it to finish to doneness. The fish leaps into a sea of carrot risotto and is showered with a shaved brussels sprout salad seasoned with a lemon vinaigrette.

A tender cut of beef, taken from the chuck, is marinated with spices and seared to doneness. The beef is sliced into medallions and served alongside seasonal vegetables and finished with chimmichurri sauce.

$18.95A Curry of Shrimp

Our cook Thomas Spurlock creates a sauce of ginger, mango, and coconut milk, chili peppers, curry and dry vermouth which he strains and purees. Garlic, onion, and ginger are browned in a bit of oil. He gives the shrimp a spice rub, then summons them to the pan to mingle with chunks of mango and the sauce. The scented result is spooned around a mound of brown rice and garnished with pickled red onion.
