Chef Eric spent time in Charleston where he became inspired by this southern classic. The shrimp are sautéed with house-made Italian sausage. he deglazes the pan with a stock. The tasso (a spicy Cajun ham) gravy is then stired in before contents are poured out atop stone-ground organic pimiento yellow grits and then garnished with crisp green onion.

The Berkshire pork is mentioned in English breeding record kept a few hundred years ago. Berkshire pork belies the term "white meat" due to its superior marbling and darker color. Here, the chop is pan roasted in a cast-iron skillet with a bit of salt and pepper. We move it to the plate accompanied with rice pilaf and andouille sausage. The chop is then dressed with red creole sauce and garnished with chopped green onion.
